Visualising the science behind food safety

A poster exhibition will take place during the European Hygienic Engineering & Design Group World Congress, complementing two days of expert presentations from 21-22 November at London’s ExCeL, helping to raise awareness of hygienic design and explain the science that underpins practical measures to improve food safety.

Several poster displays will focus on the use of computational fluid dynamics (CFD): to simulate cleaning processes in the food industry, analyse systems and optimise equipment design. Other posters will examine the hygienic design of poultry processing plants ­– an issue of particular resonance in the UK at the moment, given high-profile incidents that have been exposed in the sector over the past couple of years.

Displays will also describe: the development of a flexible mobile cleaning device for open processing and packaging lines; a comparative study of different types of conveyor belts; and the development of a cleaning simulation software for the virtual design of complex spray cleaning systems. This makes use of computer aided design (CAD) to predict the cleaning effect and volume flow distribution of spray cleaning systems.

Another poster display will describe the Global Food Safety Initiative (GFSI) Audit Scheme requirements for the hygienic design and maintenance of cleaning tools and utensils.

Not forgetting the importance of people in ensuring that high levels of food safety are maintained in food processing operations, another poster display will examine whether hygienic design can support the implementation of a proactive food safety culture within businesses.

Lastly, a poster will investigate the application of cloud computing to food engineering systems, using the impact of Industry 4.0 – the Fourth Industrial Revolution – on meat processing as a case study.

All posters exhibited at the EHEDG World Congress 2018 will be considered for an award. The EHEDG Scientific Committee will score each poster on content and presentation and the top three posters will each receive a certificate. They will also be invited to the Congress Dinner on the evening of 21 November, compliments of EHEDG. The poster awarded the highest points will also receive a free place on an EHEDG Advanced Hygienic Design training course. The Hygienic Study Award, supported by EHEDG, will also be presented at the dinner.

Hygienic Study Award 2018
Since its inception in 2009, the Hygienic Study Award has honoured the next generation of researchers and scientists by promoting science and research in the field of hygienic processing. Knowledge and research resulting from the award are an added value, which will contribute to the advancement of hygienic design worldwide and help encourage the development of an international community in this important topic.

The award acknowledges three remarkable, innovative and high-quality diploma, bachelor’s, master’s and PhD’s theses. Such studies highlight the hygienic engineering and design of machinery and equipment, best practices in material usage and material surfaces under hygienic aspects as well as the general field of fouling and cleaning of food-related materials, food contact materials, tailored surfaces and the attachment of microbial species.
